GRAPES: syrah + mourvedre
VISUAL ANALYSIS: limpid, ruby, quite flowing
OLFACTORY ANALYSIS : herbaceous(humus, green lawn), sundry smells(green wood), spicy(green pepper), fruity(wild berries), flowery(red rose); the nose is not totally open
GUSTATIVE ANALYSIS : at the mouth, it is astringent and the final is bitter
WINE-FOOD COMBINATION: ———————-
MY PERSONAL OPINION: the nose is acceptable, but at the mouth, it demonstrates all its youth; obviously, at the enological level, it has been commited an infanticide. This wine, within some years, will become a thoroughbred horse being at the cutting edge of the wine-producing firm; it is only question of time

GRAPES: chardonnay + marsanne + viognier
VISUAL ANALYSIS: crystal clear, straw intense yellow, quite flowing
OLFACTORY ANALYSIS : aromatic herbs(majoram, lavender), sundry smells(honey), fruity(white ripe fruit, date, white peach, pineapple), herbaceous(cut grass), mineral, flowery(white flowers, jasmine); at the olfactory analysis, the sensations are so extensive and various that are capable of confusing us with a primordial aromaticity which moves to the typical fruit of the chardonnay and later to the herbaceous of viognier; the mineral note is also a very valuable presence.
GUSTATIVE ANALYSIS : at the mouth, it is almost soft and discreetly tasty just to confirm what we have caught during the olfactory exam; it is a wine which placidly spreads over the palate together with a persistence of a great wines; actually we do not perceive the alcoholic sensation that is really absorbed; the final is aromatic.
WINE-FOOD COMBINATION: salmon with extra-virgin olive oil
MY PERSONAL OPINION: a natural wine which demonstrates its character and its power in the aromatic scents of the nose and in the gustative persistence. In fact, it is like training a team in order to win the Premier League and then at the end of the season finding in the final match of Champion’s League. My compliments to the coach, in this case to the enologist.
