Santa Mónica es una viña familiar establecida en 1976 por el enólogo Emilio de Solminihac, quien la bautizó con el nombre de su esposa Mónica. Desde su creacion se ha dedicado exclusivamente a producir vinos de la más alta calidad, que expresen todo el potencial de su privilegiado terroir ubicado en el Valle del Rapel. Las uvas son recolectadas a mano y son el resultado de una producción limpia.
VISUAL: amarillo pajizo con reflejos verdosos y con un buen cuerpo.
NARIZ: azucenas, notas vegetales, limón y ciruela amarilla.
BOCA: una buena nota de acidez – bajo forma de una buena salivación, un toque de sales minerales – bajo forma de picazón en la parte interna dorsal de la lengua, y un cierre con limón y ciruela; la persistencia gustativa es de 4 segundos.
MARIDAJE: aperitivo
OPINIÓN PERSONAL: un vino para empezar una comida con el pie derecho y tener serias esperanzas de grandes éxitos.

VISUAL: color rojo rubí con un cuerpo ajustado a su tipología.
NARIZ: kuchen de frambuesa, hiedra, lilium y geranio.
BOCA: el sabor de la frambuesa abarca todo el paladar dejando concentraciones de salivación en las zonas laterales de la lengua; la amable picazón (sapidez) de la parte dorsal de la lengua certifican la presencia de sales minerales; el cierre es amigable con flores rojas que te ayudan a contar hasta 4 segundos de persistencia aromática intensa.
MARIDAJE: risotto ai funghi (arroz con champiñones)
- La tendencia dulce de los champiñones se contrapone a la sapidez del vino
- La crasitud de la receta contrarresta la salivación del vino
- La estructura de la receta iguala la estructura del vino
- La persistencia gusto-olfativa del preparado alimenticio se equilibra con la persistencia aromática intensa del vino
OPINIÓN PERSONAL: un vino para una comida que no se había programado pero sale a pedir de boca; la combinación ideal para conquistar y dominar los modernos conceptos de la enogastronomía.

VISUAL: amarillo pajizo y con un cuerpo mediano.
NARIZ: hoja de tomate, almendra, limón y flores amarillas.
BOCA: una estructura digna de nota y una suavidad de paladar que acompaña la salivación en las zonas laterales de la boca; el final de boca es con sabor a limón y hoja de tomate; la persistencia gustativa es de 5 segundos.
MARIDAJE: camarones a la plancha
- La crasitud de camarones sirve de contrapeso a la salivación del vino
- La estructura de la receta concuerda con la estructura del vino
- La persistencia gusto-olfativa del preparado alimenticio iguala la persistencia aromática intensa del vino
OPINIÓN PERSONAL: una grata nariz, una boca acorde a su tipología y un cierre correspondiente a los aromas del bouquet olfativo: un vino ideal para una receta de mariscos.
VIU MANENT SINGLE VINEYARD CABERNET SAUVIGNON

VISUAL ANALYSIS: limpid, ruby, quite flowing
OLFACTORY ANALYSIS : fruity(cherry, berry, marmalade), spicy(vanilla), herbaceous(undergrowth, humus, grass), toasted, sundry smells(mentholated), flowery(violet, wild rose); at the olfactory exam, it is a hundred-per-cent Chilean wine: great variety of perfumes well defined with a richness and a fineness at the nose really excellent
GUSTATIVE ANALYSIS : at the mouth, it is a structured and vigorous wine even if the persistence is not so exceptional; the finale is with herbs and wood with a discreet elegance. It deals with a very well done wine because we do not perceive the alcohol
WINE-FOOD COMBINATION: pappardelle al cinghiale (typical Italian dish)
MY PERSONAL OPINION: with a recipe of pasta accompanied by a game sauce in order to contrast the acidity of the dish with the tannic note of the wine and as the sweet tendency of the food counterbalances the mineral note of the drink. Briefly, the start is like a Ferrari in pole-position at Montecarlo Gran Prix, but unfortunately, the arrival does not allow to the team to compete for the best place at the end of the season.
VIU MANENT RESERVA CARMENERE

VISUAL ANALYSIS: limpid, ruby, quite thick
OLFACTORY ANALYSIS : fruity(sherry, strawberry, jam tart), spicy(vanilla), sundry smells(soap, wax, talcum powder), flowery(violet); at the nose is quite palatable with some tertiary scents surely coming from first use barrique. After an hour, a mentolathed flavour comes out mixed with herbaceous one which captures the gustative papillae
GUSTATIVE ANALYSIS : at the mouth, it results to be lightly tannic, even if it is ready to drink because it is not tiring; the body and the structure is about carmenere but the nose is not so corresponding because it is not stern and masculine, on the contrary it is elegant and persuasive
WINE-FOOD COMBINATION: on every occasion when eating meat
MY PERSONAL OPINION: I have tried to join it to the lasagne prepared by one of my colleagues and the wine brushed them off, so I have only to miss my neighbour, that is Mr. Lambrusco di Castelvetro. Whereas when I have joined the wine to the most common empanadas (bought at the supermarket), it really works splendidly. Winetasting this wine, my mind goes back to Kos Island beach (Dodecanese) when I was drinking an ouzò and I was mixing up its scents with the flavours of Turkish cuisine brought on the coast by the Aegean breeze
VIU MANENT RESERVA CHARDONNAY

VISUAL ANALYSIS: crystal clear, intense straw yellow with golden reflexes, quite thick
OLFACTORY ANALYSIS : sundry smells(butter), spicy(vanilla), fruity(tropical fruit, lemon) herbaceous(fresh grass), flowery(wild flowers, daisy); at the nose, it becomes interesting as time goes by thanks to a sequence of scents really engaging
GUSTATIVE ANALYSIS : at the mouth, it is vigorous and persistent in equal parts; the finale is corresponding to what we have identified at the olfactory exam – lemon, tropical fruit and butter
WINE-FOOD COMBINATION: chicken with mushroom sauce
MY PERSONAL OPINION: a chardonnay that is thrilling and the vinery persuades one more time. I would like to consider it as a middle course between a pleasant Sardinian almond flavour – vermentino or nuraghe – and an exciting chardonnay coming from Burgundy – Saint-Aubin. Actually, when the wine heats up, the vanilla is transforming in a perfume of sugared almonds of a September wedding of my loved Tuscany.

VISUAL ANALYSIS: limpid, intense ruby, quite thick
OLFACTORY ANALYSIS : fruity(dry cherry, blackberry marmalade), herbaceous(humus), distinct scents(wood, mentholated); at the nose, it is not totally open
GUSTATIVE ANALYSIS : at the mouth, there are not the tannins of the carmenere and there is lot of minerality, too much minerality; the structure is the typical one of the Chilean red wines, then it is strong and well supported by the alcoholic sensation
WINE-FOOD COMBINATION : barbecue of red meat
MY PERSONAL OPINION: the red Chilean wine desired for everybody: a great body, strong alcohol, it lacks only of exhorbitant carmenere’s tannins; the huge sensation of the sapidity takes to combine it with a barbecue of red meat underdone in order to supply the right succulence and the sweet tendency to counterbalance the mineral and alcoholic elements of this carmenere
CASA SILVA RESERVA MERLOT

VISUAL ANALYSIS: limpid, intense ruby, quite thick
OLFACTORY ANALYSIS : fruity(ripe cherry, blackberry marmalade), herbaceous(humus), toasted(sweet tobacco, coffee), spicy(green pepper, cinnamon, nutmeg), flowery(red dry flowers); at the nose there are scents not very well difined which reveal a barrique for the structure and not for the fragrances
GUSTATIVE ANALYSIS : At the mouth, it is a wine so heavy that it will be almost defined like a hairshirt for the palate; surely the wine structure is one of these that does not pass unobserved
WINE-FOOD COMBINATION : beef steak rare
MY PERSONAL OPINION: a wine not very well open at the nose and exhorbitant at the mouth. Drinking this wine, it is useful to make reference to the simile made a few minutes ago underlining that if a devout takes the hairshirt as a necessary sacrifice even a table companion can try to match this wine so corpulent and strong with a rare red meat

VISUAL ANALYSIS: crystal clear, intense straw yellow, quite thick
OLFACTORY ANALYSIS : fruity(exotic fruit, green apple, banana, pineapple, papaya, mango, chirimoya), spicy(vanilla), herbaceous(fresh grass), mineral, flowery(daisies); at the nose we perceive the good use of the barrique
GUSTATIVE ANALYSIS : at the mouth there is a great structure and a wood aftertaste which only confirms what we have pointed out at the nose; a wide use of the barrique
WINE-FOOD COMBINATION: conversation wine at the end of the meal
MY PERSONAL OPINION: a white wine perfect at the end of the meal for its vigorous body and its sweet tendency; being a structured chardonnay, heavy and with body, it is a chardonnay without personality due to the fact that these characteristics are spread all over the world when we use barriques and we receive a great number of sun’s hours during the year
CLOS APALTA 2007 – CASA LAPOSTOLLE

Clos Apalta proviene de nuestros viñedos no irrigados de más de 60 años de edad, de la zona de Apalta, apelación Valle de Colchagua. Es una mezcla única de cepas Carmenère, Merlot y Cabernet Sauvignon.
La familia Marnier Lapostolle, está orgullosa de ofrecer esta producción especial limitada, desarrollada bajo la supervisión del famoso enólogo francés Michel Rolland y producida sólo en cosechas exceptionales. Clos Apalta es la expresión pura de la tierra de donde nació. Sin clarificado ni filtrado para preservar la autenticidad del terroir, es un vino de categoría mundial y de calidad que no se transa.
VISUAL ANALYSIS: limpid, ruby red, quite flowing; it is a sensational wine just analysing the colour.
OLFACTORY ANALYSIS: at the nose, this wine dominates even the rougher spirits; the olfactory bouquet is composed of cherry, strawberry, blackberry marmalade, vegetal note, wood, white pepper, liquorice, green peppers, fruits in syrup, balmy, caoutchouc notes, coffee, chocolate and red rose. The cabernet sauvignon is easily recognised by the scent of green peppers, the carmenere is identifiable by the vegetal note and as regards the merlot, it is not so simple to find.
GUSTATIVE ANALYSIS: a thoroughbred horse who is actually transforming in a pure stallion; warm and snug, smooth and tasty in the same time, it is also structured and endowed with a splendid body. The gustative persistence is about 6/7 seconds. The final is balmy and mentholated flavoured. A wine for a competition, it will surprise always and everybody: a noble nose, an aristocratic mouth, a great persistence and a fantastic final.
WINE-FOOD COMBINATION: furred game (wild boar with red sauce)
MY PERSONAL OPINION: I love drink this wine by myself because in the moment that it enters into the mouth, it makes me smile pleasantly; at the olfactory analysis, at a later time, it comes out the fragrance of cigar and cedarwood in order to take this Chilean wine as a French wine, but at the visual exam it cannot be French because the colour is too strong and the fluid is too stick. It is a good wine: more important than Don Melchor, not so elegant like Alma Viva, but very complaisant at the taste buds.
