VISUAL ANALYSIS: limpid, ruby with purple reflexes, quite thick

OLFACTORY ANALYSIS: toasted(coffee, sweet tobacco, torrefaction, chocolate), distinct scents(mint’s flavour), fruity(cherry, wood strawberries, humus), herbaceous(green pepper), spicy(clove), flowery(petals of red rose); in the olfactory analysis, the typical scents of carmenere(coffee, chocolate)

GUSTATIVE ANALYSIS: at the gustative analysis, the vigorous body of carmenere affirms its presence; the end is with coffee and chocolate and it confirms perfectly what we have capted at the olfactory analysis and we will give us a magisterial correspondence between nose and mouth

WINE-FOOD COMBINATION: roasted meat

MY PERSONAL OPINION: interesting the mint’s flavour at the olfactory analysis, great the vigourous body at the gustative analysis and surely it will be special the combination with red meat; it is a pleasure wine-tasting carmeneres which express a their own behaviour and at the same time they come close to the characteristics of the international taste; you are never tired to drink it, you will arrive at the end of the bottle without realising

El vino está compuesto por numerosos componentes y propiamente los dichos menores son los principales responsables de las funciones positivas  que una buena copa de vino de calidad puede desarrollar en nuestro físico.

¿Cuáles son los efectos positivos del vino ?

1. El vino desarrolla una función de estímulo y activación de la digestión, favoreciendo en particular la secreción salivar y de los jugos gástricos

2. Pequeñas cantidades de vino parecen tener la capacidad de contrarrestar la formación de cálculos biliares

3. Estimula la diuresis, es decir la eliminación de agua trámite los riñones

4. El potasio presente tonifica los músculos y los estimula a la actividad

5. La presencia de minerales como el hierro y el cobre  favorece la función de producción de las células de la sangre, y otras ventajas a nivel de la circulación de la sangre se deben  a la presencia, sobretodo en el vino tinto, de algunas sustancias que facilitan el decremento del nivel de colesterol en la sangre, favoreciendo un ligero aumento del colesterol bueno y una disminución del colesterol malo. Este efecto es debido a la presencia en el vino tinto de los dichos polifenoles.

6. El alcohol etílico, gracias a su acción de fluidificación, favorece el fluir de la sangre dentro de los vasos sanguíneos y unos estudios confirman como el vino desarrolle una cierta acción protectora respecto a los riesgos de enfermedades  cardíacas.

¿ Cuáles son los efectos negativos del vino ?

1.  El alcohol etílico es una sustancia energética y 1 gr. de éste libera 7 kcal; sólo las grasas liberan más calorías (9kcal/gr.). Un litro de vino entrega casi 700 calorías y el aporte calórico necesario para una persona adulta varía entre las 2000 y las 2700 calorías.

2.  El alcohol etílico, si consumido en cantidad excesiva, tiene efectos negativos sobre el aparato digestivo aumentando inoportunamente la secreción de jugos gástricos.  Es notorio también que el abuso de alcohol pueda conducir a la epatitis de alcohol con graves degeneraciones del hígado y del ser humano.

OLFACTORY ANALYSIS: sundry smells(wood, mentholated), spicy(clove), toasted, fruity(blueberry marmalade), flowery(dry rose); a good nose

GUSTATIVE ANALYSIS: a mouth of an aged red wine with softness and the dryness of the tannin

WINE-FOOD COMBINATION:  beaf steak underdone

MY PERSONAL OPINION: the nose is like a player with class, but the mouth is like a hard player, a strong midfielder. In brief, we are deal with a good team for Europe League, but far from taking part in Champions League

GUSTATIVE ANALYSIS: at the mouth, it is built up thanks to a softness and a robustness that with the right acidity make it balanced

WINE-FOOD COMBINATION: beef steak with nut sauce

MY PERSONAL OPINION: at the nose, the two scent concentrates (recipe and wine) are jointed in unison; the salivation of the meat contrasts the softness of the wine; the wine persistence counterbalances the meat persistence

MY PERSONAL OPINION: a good cabernet sauvignon which matches to a meat not so demanding. Countryside, rain, wind of north that give us autumn leaves scent for the goal of appreciating our barbecue in a sort of wintertime

WINE-FOOD COMBINATION: pasta with nuts sauce

MY PERSONAL OPINION: a pleasant wine at the nose and at the mouth. Ideal for a first dish with meat or a pasta with a quite marked sauce

WINE-FOOD COMBINATION: barbecue of red meat

MY PERSONAL OPINION: after a cold day, we have found the right companion for a supper with meat

CHARDONNAY – DON CARLOS – VALLE DEL MAIPO –  TERRAVIN LTDA. – CARDONAL ALTO – PARCELA N° 4 – HUELQUÉN – PAINE – CHILE         2005   13,7%

VISUAL ANALYSIS: quite limpid(petillant), straw yellow, quite thick

OLFACTORY ANALYSIS : herbaceous(grass), fruity(lemon, tropical fruit), flowery(daisy); an acceptable nose

GUSTATIVE ANALYSIS : a balanced mouth with a tropical fruit final; good persistence and well-made

WINE-FOOD COMBINATION: spaghetti with cream and fish

MY PERSONAL OPINION: it does not have the friendly touch of other chardonnay, but it becomes tasty for its characteristics of home-made wine

VISUAL ANALYSIS: quite limpid(petillant), intense straw yellow, quite thick

OLFACTORY ANALYSIS : fruity(banana), sundry smells(butter, honey), herbaceous(camomile, tea),    flowery(dandelion); A nose quite ample and typological

GUSTATIVE ANALYSIS : a good mouth even if the softness of the nose is not present at the palate; the final is just a little bitter due to the fact that it wants to underline the use of the wood

WINE-FOOD COMBINATION: baked reineta pie

MY PERSONAL OPINION: a good tertiary at the nose with scents really appreciable that are following in the mouth and give you a final tendentially bitter for the barrique’s passage
